Don Papa Rum Manila Disco Cocktails

We thought we would cheer you up this Blue Monday with some exciting new lifestyle cocktails from Don Papa Rum, the premium single island rum from the Philippines.

Four new Don Papa cocktails have been created by Aaron Goodall, the brand’s Manila-based Cocktail Maestro, which include ‘Coco Sour’, ‘Manila Kiss’, ‘Chocolate Wonderland’ and ‘Malate Martini’, Don Papa’s twist on the ever popular Pornstar Martini.

For those of your unfamiliar with Don Papa, it’s a rum that’s distilled and aged for over seven years in American oak barrels on the island of Negros Occidental, which is known locally as Sugarlandia. The pure, original Negros sugar cane is the foundation for Don Papa Rum’s long, rich-textured finish with its flavours of vanilla, honey and candied fruits.

These ‘Manila Disco’ themed cocktails represent a decadent modern playground of dance and drinks amidst a glimmering oasis, which have been inspired by Manila’s answer to New York’s Studio 54, the wild and eccentric Coco Banana nightclub.

The ‘Manila Disco’ series of cocktails can easily be made in the comfort of your own home, as we give you a guide as to what you will need to prepare them. Firstly, you will of course need a bottle of Don Papa Rum, which is available at Sainsbury’s for £32.

First up is Coco Sour, which is refreshingly tart, as the Coco Sour pairs the rich notes of Don Papa Rum with the spiced pimento dram, notes of grapefruit juice and lemon, adding a tropical twist with some coconut syrup.

Then there is Manila Kiss, which is made with Don Papa Rum, Dragon fruit syrup, lemon juice and rose lemonade, creating a delicious concentration for this bright pink cocktail.

Chocolate Wonderland is prepared with Don Papa Rum, red wine, cognac, cacao, dried apricots, star anise, and salt and pepper, which is then infused overnight to create a perhaps much needed holiday-inspired cocktail at this time of year. It’s also the perfect drink to lengthen with hot water to warm you up on a cold January night. As the name implies, the Chocolate Wonderland gives an air of mystery, sophistication and of course, the rich flavours of Don Papa Rum.

Last and by no means least, there is the Malate Martini. This twist on the Pornstar Martini replaces the traditional vanilla vodka with Don Papa Rum, along with some pineapple juice, passionfruit syrup, lemon juice and egg white, bridging the world of the Piña Colada with the Pornstar Martini. It is best served in a large coupe, topped with a splash of Prosecco, making the perfect Manila Disco cocktail.
